Easy Recipe: Mini Mexi-Meatloaves


Meatloaf is a great way to take your basic ground meat and turn it into something delicious. After completing the recipes for Practical Paleo, I was almost shocked to look back and realize I didn’t include a meatloaf recipe, so this one will be featured in my next book, The 21-Day Sugar Detox (due out this fall – available for pre-order here).

for the sauce topping:

  • 4oz tomato paste
  • 4oz water
  • 2 Tbsp red bell pepper, finely diced
  • 2 tsp cilantro, chopped
  • 1/4 tsp chili powder
  • 2 pinches of sea salt
  • black pepper to taste
