|The mix of warm and cold ingredients is delicious!|
As Summer comes to an end and Fall is upon us, I’ve been thinking more and more about how to get lots of various colors into my salads on a regular basis. This afternoon I went to my local Real Food grocery store and picked up ingredients for this one. I had the dressing on-hand already from a batch I made not too long ago. I love the blend of fresh, crisp, raw veggies with the grilled, warm and savory grilled items.
Feel free to change up the ingredients in this salad and use my photo as inspiration for your own creation. You may also want to add things like olives or use roasted peppers in the place of the fresh peppers if peppers aren’t in season.
End of Summer Grilled Garden Salad
Yield: Approximately 1 servings.

(Use all organic ingredients when possible)
2 cups mixed greens / baby spinach blend, rinsed and dried
1 small red onion, sliced and grilled or sauteed
1 small tomato (I used a light green heirloom variety)
1/2 small sweet bell pepper or sweet cherry pepper, sliced
6-8oz grilled chicken
1 Tbsp fresh lemon juice
1 Tbsp extra virgin olive oil
Arrange veggies as you like and top with the grilled chicken and dressing.
