Guacamole is one of my FAVORITE things to eat and I pretty much wing it every time I make it. I’ve made it much “fancier” in the past, adding in diced tomatoes (which is nice when you’re trying to stretch the avocado a bit farther) and tinkering with using both chopped onions and garlic. I find that using shallots sort of takes the place of needing both the onion and the garlic separately since it has an onion-y taste with a hint of garlic-y-ness.
Here’s how I made my latest batch with just FOUR ingredients! Note: salt & pepper don’t count as ingredients since you should have them on-hand at all times… no need to run to the store to grab them!
Yield: Approximately 2 servings.
