  1. Cauliflower is rich in antioxidants, fiber, and packed with vitamins. I love it roasted with coriander, lime and red chili. Might try your recipe over the weekend. Thanks for sharing.

  2. Just a thought, but couldn’t you use frozen cauliflower as well? I know fresh is always better, but for times’ sake, I’ve made mashed cauliflower with frozen bags of cauliflower from Whole Foods and it works great – I just unthaw it on the stovetop for a few minutes, and then into the food processor it goes. It saves a lot of time with chopping, rinsing, steaming.
