My Thai Green Curry and Lime Chicken recipe is seriously simple to throw together, and let me tell you, it packs a huge amount of flavor!
I made this recipe with chicken drumsticks, which would be perfect served alongside some cauliflower or white rice, but it would also be delicious if made with chicken thighs or even wings. Trust me, you need this in your life!
Thai Green Curry & Lime Chicken

Ingredients
- 2 tbsp Thai Green Curry Paste
- 1/2 cup Coconut Milk
- 1 Lime zest & juice
- 2 cloves Garlic grated or minced
- 1/2 inch Ginger grated or minced
- 3 dashes Fish Sauce
- 1 tsp Sesame Oil
- 1 tbsp Sesame Seeds
- 10 Chicken drumsticks
- 2 tbsp Ghee melted
Instructions
- Preheat the oven to 350 degrees F.
- Mix the Thai green curry paste, coconut milk, lime zest and juice, garlic, ginger, fish sauce, and sesame oil in a large bowl. Add the chicken drumsticks and toss so the chicken is fully coated.
- Place the chicken in a large ziplock bag and refrigerate for at least 2 hours.
- Take the chicken from the refrigerator and spread the drumsticks out evenly on a baking sheet. Sprinkle with sesame seeds and bake at 350 degrees for 30 minutes. Remove from oven and brush each chicken drumstick with the melted ghee, then bake for 30 more minutes.
- Serve with lime wedges and a sprinkling of sesame seeds and cilantro.

Does ghee come in sticks or is it always in a jar? When it comes to scraping it out of a jar, the struggle is real. 😉

Is it possible to get fish sauce that does not contain sugar? Would it be okay to leave the fish sauce out?

I’m not sure what you mean because the fish sauce I use has no sugar!! I use Red Boat brand, it’s linked from my Favorites page 🙂 You can leave it out but it really adds the Thai flavor to the dish.

I just bought your book Keto Quickstart. Read it, thumbed through the wonderful recipes and have a question. I want to do the 1250 calorie tracker but I am at a loss about how to incorporate your recipes into the tracker. for example, this recipe is for 4 serving but there is no breakdown of calories, proteins, carbs, and fiber. Also, the recipes in the book, although it does have the breakdown for the meal, is it listed as the calories per serving or for the whole meal?

I would not use chicken breast as it’ll get dry very quickly!
