  1. Chicken Parmigiana is one of my husband’s favorite pre-Paleo meals, so I was excited to see this recipe. It turned out really well. The chicken was actually crunchy, which is often difficult to accomplish using nut-based breading. I used chicken breast instead of thighs, almond flour instead of cashew flour, and a jar of pasta sauce I had left over; mostly because these are the ingredients I had on hand. I think this will also be my go-to recipe for chicken tenders for my boys:) Thanks Diane.

  2. LOVE this recipe! I made it with chicken breast, almond flour and homemade marina sauce I had, served with spaghetti squash. I made it one night with mozzarella cheese and the next with goat cheese, this has been added to regular recipe rotation in our home. Thanks Diane!

  3. This was great — thanks, Diane! I used ground sunflower seeds for the breading, since that’s what I had on hand. I’ll definitely be making this again!

    I noticed in this recipe you have cashew flour… then you said “To make this recipe friendly for all levels of The 21-Day Sugar Detox, omit the cheese. If you are on Level 1 or 2 of the 21DSD, the recipe is compliant as-is.” tecnically isnt this incorrect as you cant have cashews on the NO section 21 Day sugar detox? A friend of mine made this recipe last night and she is on the level 1 sugar detox…. please let us know!
