An easy egg-free breakfast option, filled with delicious bacon and hearty root veggies. Is also great with an egg on top, if you'd like!

- 4 slices bacon
- 1 shallot, minced
- 4 cups grated parsnips (approximately 8 medium)
- 1/4 cup grated carrots
- 1 tablespoon ITALIAN Spice Blend
Slice the bacon crosswise into 1/4-inch strips. In a large skillet over medium heat, cook the bacon until the fat is rendered and the meat is cooked, approximately 10 minutes. Remove the bacon from the pan and set on paper towels to drain, leaving the fat in the pan.
Add the shallot to the pan and cook for 2 minutes, or until it becomes translucent. Add the parsnips, carrots, and ITALIAN Spice Blend to the pan and continue to cook until the vegetables are soft and cooked through, 5 to 8 minutes.
Add the bacon back to the pan and toss to combine and heat through.
Serve with eggs (any style) or your favorite breakfast sausage links.
Omit the shallot.
