Ground beef gets kicked up to a whole new place when you make it into taco meat and pair it with some fun toppings.

Ingredients
- 1 pound ground beef
- 2 tablespoons TACO & FAJITA Spice Blend
- 2 cloves garlic, grated or minced
- 8 cups chopped romaine lettuce
- 1 bell pepper (any color), sliced
- 1 cup sliced or chopped tomatoes
- 1 cup salsa, any kind
- 1 avocado, sliced, or 1 cup guacamole
- Chopped fresh cilantro, for garnish
- 2 limes, quartered, for serving
Instructions
In a large skillet over medium-high heat, cook the meat until thoroughly browned and cooked through, adding the spice blend and garlic when the meat is about halfway done.
While the meat is cooking, arrange the lettuce and bell pepper slices on a large serving platter or in four individual serving bowls. Top with the browned meat, tomatoes, salsa, and avocado slices.
Garnish with cilantro and squeeze lime juice over the salad as dressing.
Notes
NIGHTSHADE-FREE?
Use TEX MEX Spice Blend and omit the bell pepper and tomatoes. Use cucumber or fruit salsa and add shredded carrots for color.

Freeze the cooked and seasoned meat and defrost it to enjoy with fresh salad vegetables and toppings when you’re ready.
CHANGE IT UP
Try substituting ground bison, turkey, or chicken in place of the beef.
You can also serve this dish as tacos with lettuce-leaf “shells.”
