The holidays are (finally) behind us and it's time to jump into a healthy routine that won't be interrupted by dips, sweets, and cocktails!
And with this colder weather, I like to cozy up with a warm bowl of soup, stew, or chili.
My new and delicious Instant Pot Butternut Squash Chili recipe is what I'm sharing with you this week. Good news, you can easily make it in a slow cooker too!
This recipe uses 3 of the Balanced Bites Spice Blends (Coffee BBQ and Taco & Fajita) - optionally just 2 if you don't want the heat from the Smoky Spice Blend. BBQ CHICKEN PIZZA WITH CRISPY THIN CRUST
I've been on a little "what else can I do with Siete Family Foods grain free tortillas?" kick. If you follow me on Instagram, and especially if you watch my IG stories, you've probably noticed this.
Full disclosure: Siete sponsors my husband's podcast and we've been friends with the family who runs the company (the Garzas) since maybe 2011 when two of the siblings attended one of my original seminars in Texas. So, we have a lot of the tortillas handy at all times.

We've already mastered the basic grain-free / Paleo taco situation with these tortillas, but I knew they were destined for more. I could feel it in my bones. So, I decided to give them a little more effort than I normally would (we typically warm them in a skillet with a little fat over very low heat for maybe 30 seconds or so - flipping once or twice - and that's that).
These grain-free, gluten-free pizzas really don't have much of a "recipe" per se. Mostly what you need is the recipe for my sauce and then the process for getting the tortillas crispy and pizza-like!
The only real recipe here is my COFFEE BBQ SAUCE, made with Balanced Bites Spices Coffee BBQ Spice Blend. Boom.
COFFEE BBQ BACON BURGERS
Warmer weather = outdoor grilling ALL THE THINGS! First up, my COFFEE BBQ Bacon Burger – it's seriously epic!
This will be your new favorite burger.
If you've never had a bacon burger, you're missing out! It's a burger but with bacon ground up into it.
Yes, you read that right!
The key to this recipe is that you'll just roughly chop your bacon, then finely chop it in the food processor until it's basically the same texture as your ground meat. Add the spices (including Balanced Bites COFFEE BBQ Spice Blend!) to the bacon and pulse more to combine it, this way you'll get the spices really evenly mixed throughout the burger. You can finish them with an extra dusting of the spices if you want to, but you don't need to.
We enjoy these in a lettuce wrap or with some New Cascadia Gluten-Free Challah Bread (a Portland-based bakery) sliced thick as the bun, it's phenomenal! We mail order it, but I'm not 100% sure where else they ship. We've also used the Canyon Gluten-Free Hamburger Buns and enjoyed those, as well.

Here's what I like to do: butter lettuce, a COFFEE BBQ bacon burger patty, avocado oil mayo, bacon, caramelized onions, homemade guac, and raw onion. Side of some pickles. BOOM.
COFFEE BBQ RIBS
THE EASIEST & BEST RIBS EVER. I mean it, these ribs are GOOOOOOD. And so easy. When COFFEE BBQ blend is involved, I'm all about keeping it simple!
Don't slack on the seasoning, you really want to maximize that flavor.
INSTANT POT BBQ CHICKEN
If you don’t want to use store-bought BBQ sauce (often loaded with gums or other additives!) or you don’t have on-hand, this Instant Pot BBQ Chicken recipe is for you! Make this using pantry items or items you have on hand if you’ve got my Balanced Bites COFFEE BBQ Spice Blend.
BBQ PULLED PORK TACOS
This recipe comes together very quickly if you make the components ahead of time during a meal prep day. Allot 15 minutes prep time to make the pulled pork, spicy slaw, and marinated onions, and 6 to 8 hours in the slow cooker for the pork and to marinate the onions.
This recipe features COFFEE BBQ Spice Blend and makes a ton of slow-cooked pork, so I'd suggest freezing half so you have another meal ready to go!
COFFEE BBQ RUBBED PORK WITH SEARED PINEAPPPLE
We absolutely love cooked pineapple in our house. Whether it’s grilled or sautéed, it’s a favorite to pair with lots of different proteins. Here I’ve combined the tropical fruit with pork tenderloin that is infused with a smoky coffee spice rub. When paired with a green salad and cauliflower rice or baked white or sweet potatoes, it creates the perfect Hawaiian-inspired weeknight meal.
