Ingredients
- 1 pound ground pork
- 2 tablespoons SUPER GARLIC Spice Blend
FOR THE SAUCE
- 3/4 cup coconut aminos
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon granulated onion
- 2 to 3 dashes of fish sauce
- 2 pinches of ginger powder
- Sliced green onions, for garnish
- Confetti Cauli-Rice, for serving
Instructions
Preheat the oven to 375°F. Line a rimmed baking sheet with foil and set a wire baking rack on it.
In a large mixing bowl, combine the pork and spice blend and mix well with your hands. Form the meat into sixteen 1-ounce meatballs (about the size of a golf ball) and place on the baking rack. Bake for 25 to 30 minutes, until slightly browned on the outside and cooked through so that no pink remains (you may want to cut into one to check for doneness).
While the meatballs cook, make the sauce: In a small saucepan, whisk together the ingredients for the sauce. Bring to a simmer over medium-low heat, then continue to simmer until the sauce reduces by half, 10 to 15 minutes. Tilt the pan frequently to prevent the sauce from burning.
Remove the meatballs from the oven and toss them in the sauce while they are still warm. Garnish with green onions and serve with Confetti Cauli-Rice.
