I was first inspired to try making soft-boiled eggs at home after eating the seriously delicious gluten-free avocado toast from Jane here in San Francisco. My first attempt was just a tad overcooked (no runny yolks!), but I'm happy to say after a couple of tries I nailed it and was able to enjoy a couple of perfect soft boiled eggs on top of my open-faced sandwich for lunch that day! And now I want to eat them on everything!

Ingredients
- 2 eggs
- warm water
- iced water
- boiling water
- BAGEL Spice Blend
Instructions
Prepare 2 bowls of water – one with the iced water (the ice bath) and one with warm water. Place 2 eggs into the bowl with warm water.
Fill a medium saucepan with boiling water – you'll want to fill it about 2/3 full. Return the water to a boil. Or, if you don't have an electric kettle, you can bring the water to a boil in the saucepan.
Carefully add the eggs to the boiling water and boil for 5 minutes. Then move the eggs to the ice bath and wait 1 minute.
Remove the eggs and peel them. Enjoy any way you please! I love to ‘crack' mine over gluten-free toast with a little BAGEL Spice Blend sprinkled on top.
