MEXICAN-INSPIRED TORTILLA SOUP

PERFECTLY GRILLED CHICKEN BREAST

This grilled chicken breast recipe is hands down my favorite way to prepare this cut of chicken and prevent it from drying out. Cooking whole chicken breast tends to be one of the easiest things to mess up in the kitchen, yet many people attempt it first! The biggest trick to this recipe is to butterfly the chicken breast ahead of seasoning or marinating to grill it. Butterflying the chicken ensures a quick cooking time that can be done with fairly high heat, resulting in juicy chicken that's perfect for any entree or for slicing and serving over salads and more.

You can use any of our spice blends to make tasty grilled chicken, but we especially love using our GREEK, SAVORY, SUPER GARLIC, or TRIFECTA spice blends.

INSTANT POT BUTTERNUT SQUASH CHILI

The holidays are (finally) behind us and it's time to jump into a healthy routine that won't be interrupted by dips, sweets, and cocktails!

And with this colder weather, I like to cozy up with a warm bowl of soup, stew, or chili.

My new and delicious Instant Pot Butternut Squash Chili recipe is what I'm sharing with you this week. Good news, you can easily make it in a slow cooker too!

This recipe uses 3 of the Balanced Bites Spice Blends (Coffee BBQ and Taco & Fajita) - optionally just 2 if you don't want the heat from the Smoky Spice Blend. The blends can be found ready-made and organic in large bottles for sale or you can mix them up yourself from the recipes in Practical Paleo, 2nd edition.

EASY CHICKEN ENCHILADAS

Once you have the chicken and sauce made for these enchiladas, they come together really quickly and can be an easy weeknight meal or a make-ahead/meal-prep meal to enjoy during the week. You can also make the chicken and sauce ahead of time to assemble these later, or use any pre-cooked and shredded chicken you like, or make an easy salsa chicken to use, too. We use our TACO & FAJITA and TEX MEX Spice Blends, so this recipe is bursting with flavor!
I highly recommend doubling either this entire recipe, or at least the chicken so that you have plenty on-hand for other meals - protein prep for the win!

POLLO ASADO

This simple Pollo Asado recipe is my version of the traditional Mexican / Cuban slow-cooked chicken dish, marinated in lots of lime & orange juice, & seasoned with spices such as cumin, coriander, turmeric, paprika, and chili powder.

What I love about this recipe is how versatile it is – I've served it here with my Confetti Cauli Rice, though it would also be delicious in a taco using organic corn tortillas or as a protein on a taco salad, with rice & beans, or with sautéed plantains.

BLACKENED FISH TACOS

Tacos are a perfect keto-friendly food when you swap out the high-carb shells for cabbage or lettuce. I love the extra crunch from fresh cabbage, but use any “wrapper” you like. Fish cooks really quickly, so this dish a perfect option for a weeknight when you’re pressed for time.
