POLLO ASADO
This simple Pollo Asado recipe is my version of the traditional Mexican / Cuban slow-cooked chicken dish, marinated in lots of lime & orange juice, & seasoned with spices such as cumin, coriander, turmeric, paprika, and chili powder.
What I love about this recipe is how versatile it is – I've served it here with my Confetti Cauli Rice, though it would also be delicious in a taco using organic corn tortillas or as a protein on a taco salad, with rice & beans, or with sautéed plantains.

It has to do with how the ingredients “marry” together – mini meatballs with the most flavorful broth packed with veggies, and hit with a citrus punch at the end. It's the perfect soup for a chilly day!
I like to serve mine with crusty bread and lots of parmesan grated on top – yum!

Outside the obvious foods, I like to add this to veggies, eggs, chicken, salmon, and so much more. I turned my brother on to this as well, which is why I ordered quite a few.

This stuff is a better version of those taco seasoning packets you buy at the grocery store. It’s full of flavor and the fact that you don’t have to remember to buy a packet of seasoning every time you want tacos makes this one such a win in my opinion. A pantry staple!
