5 Simple Weeknight Meals
We can all get into a cooking rut from time to time, so I'm sharing 5 of my favorite weeknight meals.

Baby kale is a fantastic way to get lots of vitamins and minerals into your diet, and it’s perfect in this Easy Kale Caesar Salad. The chicharrones add just the right crispy crunch if you want to mix things up from bread-based croutons.
Once you have the chicken and sauce made for these enchiladas, they come together really quickly and can be an easy weeknight meal or a make-ahead/meal-prep meal to enjoy during the week.
These meatballs are really simple - ground chicken, feta cheese, GREEK blend, and some lemon zest. Ball 'em up and pop them in the oven for 15 minutes. I like them with extra feta and lemon zest on top, and serve with my Roasted Potatoes with Lemon & Feta and my Ultimate Onion Dip for dipping!
