APPLE CINNAMON DONUTS

Who doesn't love a baked good with a cup of coffee — especially as the mornings turn more chilly. These apple cinnamon donuts are perfect for those cozy fall mornings!

Ingredients

  • 2 tablespoons melted unsalted butter or ghee
  • 3 tablespoons coconut oil, divided
  • 1 apple, peeled and diced
  • 3 eggs
  • 1/2 teaspoon pure vanilla extract
  • 5 tablespoons full-fat coconut milk
  • 1/2 teaspoon apple cider vinegar
  • 1/4 cup coconut flour, sifted
  • 1/3 cup almond flour*
  • 1/2 teaspoon baking soda
  • 1 teaspoon CINNAMON Infused Sugar
  • 2 pinches of sea salt

Instructions

Preheat the oven to 350ºF. Brush a 6-cavity donut pan or 12-cavity minidonut pan with the butter or ghee.

In a skillet over medium heat, melt 1 tablespoon of the coconut oil. Saut. the apple until soft, approximately 8 to 10 minutes. Place the cooked apple in the refrigerator to chill for at least 5 minutes.

In a mixing bowl, vigorously whisk the eggs, vanilla, the remaining 2 tablespoons coconut oil, coconut milk, and vinegar for about 20 seconds until combined. Add the coconut flour, almond flour, baking soda, CINNAMON Infused Sugar, cooked apples, and salt to the egg mixture and whisk vigorously until smooth.

Pour the batter into the prepared donut pan, filling each cavity about two-thirds of the way full, as the donuts will puff up while baking.

Bake for 20 minutes or until the donuts are puffed-up and golden brown.
