Mornings can be so busy, and it can be so hard to get a delicious and filling breakfast together. That's where these breakfast sandwiches come in! Make all the components of these sandwiches ahead of time and keep them in the freezer. Then, when you need a quick breakfast, pull the pieces out and reheat while you make a fresh egg. Simple breakfast sandwich, ready to go!

Ingredients
FOR THE "BUNS"
- 1/4 cup full-fat coconut milk, canned or homemade
- 1 tablespoon apple cider vinegar
- 2 teaspoons gelatin
- 4 eggs, cold
- 1/4 cup coconut flour, sifted
- 1/4 cup almond flour
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
FOR THE SAUSAGE
- 1 pound ground pork or other meat
- 2 tablespoons ITALIAN Spice Blend
- 1 to 2 tablespoons cooking fat, as needed
- 2 bell peppers, sliced
- sea salt and black pepper
- 4 eggs
- 1 recipe “Buttermilk” Buns
Instructions
First, make the buns.
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
Whisk together the coconut milk, apple cider vinegar, and gelatin in a small bowl and let sit for 5 minutes.
In a medium bowl, whisk together the eggs, coconut milk mixture, coconut flour, almond flour, baking soda, and salt. Let sit for 5 minutes. The consistency of the batter should be similar to that of a thick pancake batter—it should not spread much on its own when put on the baking sheet. If the batter seems too runny, add 1 tablespoon of sifted coconut flour and blend well.
Scoop 3 tablespoons of the batter onto the prepared baking sheet and gently spread it into 3-inch circles. Bake for 10 to 15 minutes or until the buns feel springy in the center when gently pressed.
While the buns are baking, make the other sandwich components.
In a mixing bowl, combine the meat and Spice Blend evenly with your hands, taking care not to overmix it or the meat will become tough. Form the meat into 4 patties and cook in a large skillet over medium heat for 4 minutes per side or until cooked through. Remove the patties from the skillet, leaving any fat remaining in the pan. Add additional fat if needed (you should have about 1 tablespoon of fat in the pan).
Add the bell peppers to the pan and season with salt and pepper. Sauté the peppers until they become soft and slightly browned on the edges, about 5 minutes.
Either in a separate skillet or in the same pan after the peppers are finished cooking, cook the eggs to your liking over medium heat, adding cooking fat to the pan as needed to prevent sticking. (The eggs will take 3 to 5 minutes to cook, depending on how you prepare them.)
Assemble a sandwich by placing one bun on the plate, then layering the peppers and a sausage patty, and finally topping it off with an egg. Repeat with the remaining peppers, patties, and eggs.
Time Saving Tip
To make this recipe fast and easy for your morning meal, cook the sausage, peppers, and buns ahead of time and cook the eggs to order in the morning while reheating the rest of the ingredients in a 300°F oven for 10 minutes.
