- 1 egg
- 1 1/2 teaspoons TRIFECTA Spice Blend
- 1 large celery root, peeled and shredded (2 cups)
- coconut oil or other cooking fat for pan frying
In a large mixing bowl, whisk the egg with the Spice Blend, then add the celery root and mix together until the celery root is well coated.
In a large skillet over medium-high heat, melt enough cooking fat to cover the entire bottom of your skillet in a very thin layer. When the skillet is hot, form the cakes. (You want the oil to be hot enough to brown the celery root quickly, but not hot enough to burn it before it cooks together enough for you to flip the cake over.) I recommend cooking a small test cake before you make the whole batch.
Form about 2 tablespoons of the mixture into a loose ball and press into a thin, even layer in the bottom of the skillet. Repeat with the rest of the mixture. Fry until browned on one side, about 1 minute, and then quickly flip over to cook for another 1 minute on the other side. Remove and place on a towel-lined plate. These are best if eaten immediately.
