Ingredients
- 4 (6-ounce) wild salmon fillets
- Sea salt and ground black pepper
- 2 teaspoons TRIFECTA Spice Blend
- 4 tablespoons butter or ghee, divided
- Juice of 2 lemons
- 1 teaspoon Dijon mustard
- 1/3 cup capers (about one 2-ounce jar)
- Freshly cracked black pepper, for garnish
- Lemon slices, for serving
Instructions
Set an oven rack directly below the broiler and turn on the oven to the broil setting.
Use a paper towel to pat the salmon dry on both sides. Lightly season the skin side of the salmon with salt and pepper and season the other side with the spice blend.
Melt 1 tablespoon of the butter in a large oven-safe skillet, preferably stainless-steel, over high heat. Place the salmon skin side down and sear for 2 minutes. Transfer the pan to the oven, directly under the broiler. Broil for 4 minutes, until the salmon is opaque in the center or cooked to your liking.
While the salmon broils, place the remaining butter in a small microwave-safe bowl and melt it by microwaving it on high in 30-second increments. Whisk in the lemon juice and mustard.
Remove the pan from the oven and add the lemon mustard sauce, spooning it over the fish. Add the capers and garnish with pepper. Serve with lemon slices.
