Growing up, Rice Crispy Treats (or Rice Krispie Treats) were a major staple in our house whenever it came time to prepare for a bake sale! I don't think I realized as a kid that my mom likely made these because they're so, so easy. There is practically no cooking involved, just melting of the marshmallows and mixing it all together - boom. Make these for your next BBQ, summer cookout, or any time you want a quick and easy sweet treat!

- 2 tablespoons butter or ghee (plus extra for greasing your pan)
- 10 ounces marshmallows
- 7 cups crispy rice cereal
- 1/4 cup creamy peanut butter
- 1 teaspoon Vanilla Infused Sugar or Cinnamon Infused Sugar
In a large sauce pot over medium low heat, melt the butter or ghee, then add the marshmallows and stir often until they are melted and smooth. Don't leave the marshmallow mixture unattended as it can brown or burn easily.
Place the rice cereal into a large mixing bowl, then pour the marshmallow over the rice cereal. Add the peanut butter and sugar of choice to the mixture, and stir until well combined.
Pour the mixture into a greased 8x8, 8x9, or 9x13" pan. The larger the pan, the thinner the treats will be, but any pan will do! Press the mixture into the pan with a greased spatula, making them as tightly packed as you like.
Refrigerate for 30 minutes to an hour, then cut into desired number of slices!
