PERFECTLY GRILLED CHICKEN BREAST

This grilled chicken breast recipe is hands down my favorite way to prepare this cut of chicken and prevent it from drying out. Cooking whole chicken breast tends to be one of the easiest things to mess up in the kitchen, yet many people attempt it first! The biggest trick to this recipe is to butterfly the chicken breast ahead of seasoning or marinating to grill it. Butterflying the chicken ensures a quick cooking time that can be done with fairly high heat, resulting in juicy chicken that's perfect for any entree or for slicing and serving over salads and more.

GREEK MARINATED CHICKEN

This Greek-marinated chicken recipe is really simple to pull together and oh, so flavorful! The marinade is full of Greek flavors, with lots of garlic, lemon, oregano and olive oil. Νόστιμος!! (delicious!)

EASY OVEN FRIES

I also love how easily you can change up this recipe using a different spice blend. My favorites are DINER, TRIFECTA, and GREEK... but really any spice blend would be delicious!

CHICKEN SOUVLAKI KEBABS

Greek flavors are some of my absolute favorites! These Chicken Souvlaki Kebabs feature lemon, oregano, and a rich-tasting extra- virgin olive oil that magically blend together, and take me back to our trip to Greece a few years back.

THE BEST ROAST CHICKEN

I think we could all benefit from a little comfort right now, and I can't think of anything more comforting than a homemade roast chicken. In this recipe for the best roast chicken, I like to use SAVORY, GREEK, or TEX MEX spice blends, but really any of my Balanced Bites Spices will work here.

SPAGHETTI SQUASH BOLOGNESE BAKE

What could be better than a hearty Bolognese? A Spaghetti Squash Bolognese Bake! This casserole is super satisfying and perfect for feeding a family or a crowd—or one person with lots of leftovers. This dish freezes and reheats beautifully, so make a big batch to enjoy comfort food anytime.

BACON, BRUSSELS, ASPARAGUS, & GOAT CHEESE FRITTATA

Frittatas – like this Bacon, Brussels, Asparagus & Goat Cheese Frittata – are one of the easiest ways to work veggies and extra protein into your morning.

And, I’m going to go out on a limb here and proclaim myself as not only a salad master, but *also* a frittata master.

One day, I'll blog my formula for how to make the best frittata, but here’s the gist of it:

+ Some sort of savory meat like bacon, sausage, chorizo, pancetta, shredded chicken, etc. I prefer something pork based but do you boo.

+ Leftover chunky vegetables that you chop up small, like broccoli, cauliflower, asparagus, butternut squash, Brussels sprouts, etc.

+ Fresh vegetables or leafy greens like finely chopped kale or spinach with seasoning added, I usually use Balanced Bites TRIFECTA blend.

+ Eggs whisked with some sort of milk (I use coconut) and seasonings – I often use Balanced Bites SUPER GARLIC, TRIFECTA, GREEK, RANCH, SAVORY, or ITALIAN blend and some extra black pepper. (Shop all Balanced Bites Spices here!)

+ Cheese. Of course it’s optional if you can’t do dairy, but I highly recommend trying different types of animal dairy to see if goat or sheep works for you versus cow. If you can’t do dairy you *must* use a really flavorful cured meat like bacon in the first step of umami! Oh, garlicky cooked mushrooms will work or caramelized onions for that umami as well. Otherwise, a bland frittata is in your future and you KNOW how I feel… #noblandfood.

Since I know a bunch of you will want a precise recipe as well, here's one of my favorites – it has all of the components of the formula above: salty bacon, crispy brussels, fresh asparagus, & creamy goat cheese – so good!

ROASTED POTATOES WITH FETA & LEMON

I highly recommend you first roast up a bunch of chicken thighs so you can use the fat (aka schmaltz – I wrote up a post on it here) that comes off of them to make these – that’s what we did and it makes them mind-blowingly good!

I make these roasted potatoes with feta and lemon and GREEK Spice Blend, but you can change it up and try them with almost any other blend you like.

Childhood dreams come true

As a kid my dad was the one in the kitchen and he used Cavender’s Greek Seasoning. For 15 years I’ve been adjusting and changing my diet to find something that works and Cavender’s was one of the first things to go. Tried to recreate myself but the blends were never right. Once I found Diane’s GREEK blend, game changer. I have a bottle at home, at friends, my parents, at the office. I use it on everything! Chicken. Veggies. Fish. Pasta. Potatoes. So versatile

I know the obvious application is to get those Greek inspired flavors into your every day meals, but this blend is so much more! I find myself reaching for Greek over others almost daily, especially when seasoning chicken and veggies. So good!

Love it on roasted veggies

I was introduced to BB by my daughter so I started buying BB spices. She would roast veggies with the Greek blend. Love to use the Greek blend to roast carrot strips. Whenever I fix them, everyone loves them.
