PEANUT BUTTER COOKIES

I've loved Peanut Butter Cookies for as long as I can remember - soft & chewy, filled with peanut butter flavor. SO good.

Try to use the best quality peanut butter you can find - it really makes a difference in how these cookies taste.

You can also drizzle these with chocolate for a little extra oomph!

APPLE CINNAMON COFFEE CAKE MUFFINS

These Apple Cinnamon Coffee Cake Muffins are full of warm cinnamon and juicy apples, and are topped with the most incredible coffee-cake style topping. 

I recommend buying XL cupcake liners so as much of the topping as possible stays on the muffin while they bake.

SALTED VANILLA CHOCOLATE CHUNK BLONDIES

Have you ever tried a blondie? They are similar to a brownie in shape and texture, but a blondie will use vanilla and brown sugar to get its flavor, versus a brownie that uses white sugar and chocolate or cocoa. The end result is buttery, slightly chewy, and seriously delicious. Especially when you add rich chocolate chunks and sprinkle flakey sea salt on top.

I added a little holiday fun to these brownies by also including red and green M&Ms, but you could absolutely leave these out if you like.

PUMPKIN BREAD WITH CHOCOLATE CHIPS

My Pumpkin Bread With Chocolate Chips recipe is so simple and delicious, you'll find yourself baking this all autumn long.

I love the combination of pumpkin plus white chocolate, so that's what I used, but feel free to use your favorite milk or dark chocolate chips, nuts, or omit all together. Don't skip the sugar topping though, especially if you have my PUMPKIN SPICE Infused Sugar on hand - it adds the most delicious flavor & crunch to every bite.

This pumpkin bread is delicious plain, spread with butter, or you could drizzle over a cream cheese glaze (mix together 4 ounces of cream cheese with a few tablespoons of warm milk, 1-2 tablespoons of powdered sugar, and 1 teaspoon of vanilla, then pour over the cooled loaf.)

NUT-FREE LEMON BLUEBERRY SCONES

“Oh no, I'm one of them!”

Admittedly, this is what ran through my head the day I realized (months ago now) that I could no longer eat nuts.

I know that nut allergies are a big struggle for many of you, so rest assured that I now know how you feel. It stinks. And, truthfully, I don't even care much anymore about baking treats very often, so it's not that. It's more the sprinkling of the crunchy, fatty, flavor-filled bits that I miss incorporating into recipes. You see, when you develop an allergy to something that you have eaten all your life, you know what you're missing.

I miss walnuts. And strawberries…

I've had an oral allergy to both walnuts and pecans for many years now (along with strawberries and kiwi – sigh…), but after the stress of writing two books in less than a year (you've all read Practical Paleo, so you are well aware of how much stress can affect immunity, right?), the allergy expanded. And, no, this isn't the type of allergy that will likely improve or go away if I work on gut-healing or an AI protocol. So, please be aware that this is not a food intolerance – it's an allergy – and it could potentially be dangerous for me to eat these foods. It's not surprising to me to have this allergy develop as I'm already allergic to bee stings, penicillin, and prone to sinus infections (which I rarely get anymore since changing my diet).

I can no longer eat almonds or hazelnuts either. So, as you may imagine (or know first-hand if you share this allergy), this can make the idea of enjoying a grain-free treat quite daunting.

While lots of folks out there may think that it makes more sense to just enjoy “the real thing” once in a while, referring to gluten-filled goodies that are everywhere, that's just not going to happen. I don't eat gluten. There comes a point in time when you just would rather make something from scratch, from high quality ingredients, than eat some junky donut or cupcake just because it looks good or it's easier, or you think it's “real” versus a grain-free one that isn't?! I don't understand that logic, to be honest. And I know a lot of you are with me on this, because you've eaten them after not eating them for a long time – and they're not as good as they look.

All that said, sometimes it's nice to enjoy the texture of a baked good on a cold day with your cup of #coffeewithben or tea. And understand that, for all you with nut allergies while eating a grain-free Paleo type of diet, I feel you.

Give these grain-free, nut-free scones a shot.

These are a bit more dense than traditional scones, but their mildly sweet taste is just right. If you tolerate dairy, a bit of butter as a topper on these would be perfect!

DIANE'S MORNING POUR

Do you drink iced coffee? One of my friends got me into year-round iced coffee ages ago, which isn’t such a stretch in San Francisco since our *winter* low temp is usually around 50 degrees.

It’s something I don’t make myself, and I don’t want to start. For all the things I *do* make, this is one I enjoy outsourcing.

I’ve loved Chameleon Cold Brew since early 2013, when I tried it for the first time. It wasn’t even nationally available at that time, I’m an OG fan. I know many of you have tried it from my recommendation as well. While I use the sold-cold version in jars at home, the canned versions are shelf-stable and ready-to-drink, so you can enjoy them anytime, on the road, etc.

You guys are always asking me how I mix up my cold brew coffee, so here you go! It's SO easy!

GLUTEN-FREE SOUR CREAM COFFEE CAKE

I love coffee cake, but I really wanted to find a gluten-free coffee cake recipe that used sour cream. I first tried searching for one, but I couldn't find one I loved. So, I tinkered until I created this Gluten-Free Sour Cream Coffee Cake.

This gluten-free sour cream coffee cake is easy to create using any gluten-free pancake mix you have on-hand.

It's important to use a pancake mix because it has a balance of flours as well as texturizing ingredients to achieve the right texture. This recipe won't work as well with a basic 1-for-1 gluten-free flour blend. I tried it, and it wasn't a great result.

I even tried it with a blended all purpose gluten-free flour and some xanthan gum and I didn't love that result either.

This sour cream coffee cake recipe is rich and decadent, you'll never guess it's gluten-free!

I made it with peaches here, but I've also tested it with blueberries and even a cooked-down strawberry mixture – any fruit works or none at all.

Delightful Vanilla Sugar!

I use this sugar to make hot beverages extra special or to top as a finishing sugar on baked goods like pie crust. You can really taste the vanilla in this infused sugar!

I love, love, love the infused sugars! Vanilla and Cinnamon are ones I always have on hand. I recently purchased the caramel one too and it is incredible. I use it every morning to top my coffee and because of this sugar I look forward to drinking coffee at home vs it buying out.

Deliciously vanilla!

I love the vanilla sugar sprinkled on fresh fruit (stone fruit, berries) on top of yogurt bowls, and in coffee. It’s also great sprinkled on top of baked goods like blueberry muffins or zucchini bread just before baking.
